Ice Cream Sandwiches

With the hot summer days rolling in, a cold dessert has become a daily snack. I love combining cookies with ice cream to get the perfect ice cream sandwich that is customizable and delicious. These desserts don't last long with everyone grabbing one in the heat, so I like to make a few and eat them myself.


There are two main components to an ice cream sandwich; the cookie and the ice cream. I have already made a recipe on how to make a small batch of chocolate chip cookies that are perfect for some mini ice cream sandwiches. Check out the link to learn about how I made these tasty cookies! For the ice cream, I went with some homemade vanilla ice cream that I had previously made. Let me know if you want the recipe to try to make it at home on your own. Any flavor of storebought ice cream will also work perfectly for ice cream sandwiches.

Here, I have placed the cookies into a muffin tin, then placed a scoop of ice cream on top of one cookie, and then pressed another cookie on top, sandwiching the ice cream. Let them freeze for a couple of hours, and then enjoy!

The sandwich is great as it, but I love to add some topping to add some more flavors. I have rolled the ice cream in graham cracker and some sprinkles to add a sweet topping.

To make a really quick ice cream sandwich, grab some premade cookies or graham crackers and sandwich the ice cream for some dessert on the go. Be sure to try out this recipe on a hot summer day for a cool treat!
